Energy Bars
Rainbow Chip Oatmeal Bars
3 sticks of butter
1-1/4 cups packed brown sugar
1 cup white sugar
2 eggs
1 tablespoon vanilla extract
3 3/4 cups flower
1 cup quick-cooking oats
2 teaspoons baking soda
1 teaspoon salt (kosher)
12-ounce package M&M's mini baking bits.(or chocolate chips)
Preheat oven to 350degrees
Cream butter and sugars until light and fluffy. Add egg and vanilla extract and
combine.
In separate bowl,combine flour,oats,baking soda and salt. Add to creamed mixture.
Add baking bits. Spread dough on ungreased 11 by 17in. baking pan. Bake 25
minutes,until light brown and firm. Cool in pan: cut into squares
